Unlimited Blade Works (UBW), [make sure its the TV series not the movie], has no trauma, its fairly light hearted btw.
no wishes were done, kirei and gilgamesh gets a side effect from the grail 'spilling' out its contents.
You can ofc, go watch the 2006 Fate/stay night anime for more Saber lore, and others too, before UBW.
some notes:
Waver will go on to become Lord El Melloi II (he has his own anime), the temporary successor to Kayneth. (he uses the conqueror shirt sometimes, important for the new Fate anime, Fate/strange fake)
Saber's summoning is special, that battlefield is basically her last battle which ruined all of Camelot. (which results in her being able to remember past wars)
Kiritsugu never came back to Illya (important? for Illya lore).
Yes, Kirei's dagger is the same one that killed Tokiomi, yes, he is very fucked up.

Saber has no idea what Kiritsugu saw "inside" the Grail, so from her perspective her Master just ordered her to destroy the thing they were both after.
No wish was granted at the end, the Grail basically overflowed a bit. Kirei just interpreted the sight as his wish having been granted.
Regarding the ending in general, this is a prequel after all, so the ending was set in stone, as it has to end the way it does to connect properly to Fate/stay night.
We also finally saw what the countdown at the end of each episode was; it was counting down to the exact second where Shirou (the red-headed boy) was saved by Kiritsugu in the fire. The whole series Fate/Zero is basically to provide context for this event, which is of course important for the main story of Fate/stay night.
Saber here does not return to the Throne of Heroes like all the other Servants, because her circumstances are different/special. I won't spoil it, but it only gets explained in the Fate route of Fate/stay night (the Visual Novel, or the 2006 anime).
Most people skip the 2006 anime "Fate/stay night" (with good reasons). It's the adaption of the first route of the Visual Novel, and it sadly has lots of problems, which is why it usually gets skipped. I personally still find it watchable, and it is Saber's route.
If you want to skip it, the next thing after Fate/zero to watch would be Fate/stay night: Unlimited Bladeworks. Make sure it's the ~26 episode tv series and not the movie. After that, there are the three heaven's Feel movies.

Glad you enjoyed Fate Zero. It's super rewatchable imo. Like you said Waver is a character you do a complete 180 on by the end. Just being able to see Kirei's downfall knowing where he ends up is super interesting. He's such an enigma for so much of the series. There so many interesting characters with such firmly held beliefs that seeing them duke it out in the metaphorical battlefield is just as fun watching their actual fights.
As the others said already, Unlimited Blade Works (TV show) is the next to watch. I think it is good to go into UBW with set expectations because my first watch of it left me pretty disappointed. Fate Zero is a much more thought provoking, philosophical, and mature show with infinitely more interesting characters. While UBW is not bad as a series, it suffers in that aspect especially if you are coming hot off of Zero. It is more akin to a shounen battle series imo. Not to shit all over it because the lore and plot twists are still solid.
The three Heaven's Feel movies are a good middle ground between the two and it's cathartic to see the actual true ending to cap off the whole thing. Plus its visually gorgeous.
There's something I want you to understand. Fate/Stay Night isn't exactly a sequel. It technically is, by virtue of happening chronologically later, but it also isn't. Fate/Zero is the Prequel to Fate/Stay Night, because Fate/Zero was a novel written AFTER the Fate/Stay Night visual novel was released. FSN -> FZ.
as for Watch order, they were both written in a way that either could be watched first, so there's gonna be some exposition of things that you might already know, and there's gonna be hints of things that was revealed in FZ, but the show assumes you just don't know, by , like i said, virtue of FZ being written after FSN.
