Imma say it right now Vinland Saga is better than death note but they're both great. Vinland Saga is about the characters and how they interact with the world and navigate through it, not about the big epic fights. Yes, there's awesome fights in there but that shouldn't be what you focus on.

Subtitles
The openings and endings are not soundtracks. Soundtracks is the music played in the background while watching the show itself. Normally its called an OST which means original soundtrack. Openings and endings are not normally referred to as the soundtracks of an anime. It isn't a big deal but there are a lot of very very good actual soundtracks in anime that aren't openings and endings. I recommend reacting to my hero academia "might u" soundtrack. Its pretty amazing.
Your missing out a lot if you don't react to this anime This is a very underated anime but a good anime i am so sad that this anime is not famous and well known few people react to the openings in YouTube Try Reacting to (Legend of Galactic Heroes Die Neue These)Op And Ending There The Best It is similar to Game of Thrones And Star wars there are 3 openings 2 and 3 are the same music but different visuals there are 3 endings as well there are no magic in this anime only sci-fi and massive space battle of thousands of ships and the political struggles of 2 faction The Free Planets Alliance Are Democracy And the Goldenbaum Empire are Totalitarianism Government the Anime reflects the politics in our real world in this anime the are no good and evil only different philosophy and human Nature of different characters in this anime there two versions of this anime the ( Legend of the Galactic Heroes Die Neue These )is the one i recommending to you is released in 2018 is the new perspective the other vision is (Legend of the Galactic Heroes) was released in 1980 it has a lot of episode 110 in total the 2018 has 12 episode each season currently the 2018 version has 4 seasons currently airing this anime deserves to be famous because how visually stunning and good story this anime can be.

Both the sub and the Netflix dub are stellar to watch Vinland Saga in, I've watched it in both and enjoyed the anime both times

based take on sub & dub. As many others have said, Vinland Saga is spectacularly written, directed, & animated. Definitely a top tier series all throughout so far (the second season is still ongoing right now), though I couldn't tell you if sub or dub was better; possibly the dub since it does take place in English-speaking countries, but I watched it subbed so idk how well it was cast. Death Note btw is a slightly awkward 37 episode series, but it is definitely one of the classics and the dub of it is just superbly performed, so I do recommend the dub for it.
Death Note is like 38 episodes long. So I think you could start watching both Vinland Saga and Death note at the same time. Mind you, both the shows are great.

Vinland Saga is top quality anime in every way and I'm sure you'd love it.
Personally I prefer watching dubs when I can since you can actually watch the action and not have to read and see the action
