The old anime is not a perfect adaptation whatsoever. The manga is completly different in it's tone and stampede is much closer to it so if you like to compare it to anything compare it to it's original source (which is imo much better than the 98 anime). But I think comparing Stampede to anything is pretty useless at this point because it's not even finished. I think we have only seen a small preview at this point and the manga is pretty long so if they are planning to adapt all major plot points from the manga it's going to be amazing but we'll just have to wait and see!
Also pretty sure he wasn't out to kill Knives, just harm him or he was just defending himself. Just like he does in the anime and manga all the time. What do you want him to do not shoot at all? The characterization for everyone is going to change as well after the time skip. They said everyone is a little more naive in this version (sakuracon). So we'll just have to see how they develop everyone in the future.
well 98 anime don't come even close to manga because issue from publisher so they has to came up with their own idea+something from concept story of manga then they have a second chance to created with complete story from manga in stampede but with some change of story telling with Maximum Vash come up front more than goofy Vash from early chapter

Truth is, I stopped watching the original anime when the sexism became ridiculously overt and undeniable. I've always meant to finish it, but just remembering how Vash said 'a woman's place is in her husband's home' sends me skittering away again. Does this new version avoid sexism being affirmed?
I kinda disagree with your take on the pacifism point. I’d argue Vash was even more of a pacifist than he’s ever been not just by the manga’s standards, but the 98 anime’s too. Vash in the 98 anime would shoot and use his gun, but the point was that it was in effort to save people while also deliberately shooting areas of people in a non lethal manner. Shots that won’t outright kill. Here in Stampede, Vash refuses to point his gun at any person to shoot ‘em except Knives in various instances. Ep 3 and Ep 12. Outside of that, Vash only uses his gun on inanimate objects throughout the season and ops for hand to hand combat majority of the time. The point here is that he will not kill or even attempt to cause extreme harm under any circumstance. For me, it was like letting out a breath of air I’d been holding when he actually starts using the gun in ep 12. He’s in a position where he realizes he’s forced to act and can’t just get away with a quick punch. However even then, if you pay attention to the areas he shoots Knives at, it’s always near the arms or legs or his knife tentacle things (the animators were very careful with the details in that episode). The way I see it, he’s growing into this compromise of having to shoot while still trying to minimize the damage caused which works with this anime’s prequel angle.
